Center for Food Safety and Applied Nutrition
The Center for Food Safety and Applied Nutrition (CFSAN) is a
department of the FDA whose mission is "to promote and protect the
public health and economic interest by ensuring that the food supply is
safe, nutritious, wholesome, and honest, and that cosmetics are safe and
properly labeled." The CFSAN WWW site provides access to a variety
of FDA publications, covering such areas as food additives, biotechnology,
food labeling, and foodborne illnesses.
